Cooking - this is what I've cooked over the last few days
Sunday - Roast chicken thighs with roasted veg (aubergine, onion, garlic, cherry tomatoes, courgette) cannelini beans and courgette and aubergine fried in garlic butter. The Cherry Tomatoes I grew myself
Monday - Cooked a massive pan of chilli. Used my home grown chillis. There was enough to freeze for 3 more family meals.
Tuesday - Chicken and Leek bake - only I used quorn pieces instead of chicken - also used mushrooms, a couple of rashers of chopped bacon and garlic in a white sauce - topped with cheese and grilled
Wednesday - no cooking - football training
Tonight - Chicken and Asparagus pie, mashed potatoes, carrots (home grown), broccoli and cauliflower.
Isn't Mrs Chimp lucky?
Oh and Liam, sorry bout all the chickens mate - plenty more fish in the sea

| I would love some stew/casserole ideas, I have a slow cooker I really can't get a nice thick tasty stew out of!

I'll have a word with my son - he is the slow cooker specialist in our family. If you want to try this recipe you will get a good stew, it's easy to follow and improves if left overnight before reheating and eating. The residual Old Peculier beer you can drink. There has to be some perks.
Braised Steak ą la Masham
1-pound (450 gm) Braising Steak
1 Large Onion
2 Medium sized Carrots
¼ pound (125 gm) Chestnut Mushrooms
1 Knorr Beef Stock Cube
200/250 ml Theakston's Old Peculier Beer
Salt & Pepper to season
Seasoned Flour ( 1 tablespoon Plain Flour + Salt & Pepper)
Cooking Oil (Sunflower or Groundnut Oil)
Trim the fat off the Braising Steak, leaving on the amount you personally like, or buy lean Braising Steak with minimal fat. Cut the Steak into four 4 oz (110 gm) sized pieces. Heat about one dessert spoon of cooking oil in a frying pan and seal the floured meat allowing it to just brown. Place the sealed meat onto a plate, which is covered with a piece of Kitchen Roll. Add a little plain flour to absorb any residual oil and cook out the small amount of roux.
Peel and slice the Onion into rings. Peel and cut the Carrots in half lengthways and cut on the slant into pieces about 1 inch long. Place the sliced vegetables into a casserole dish with fitting lid.
Dissolve the Knorr Beef Stock cube in 100 ml of hot water and make up to 400 ml with cold water. Deglaze the hot frying pan with the stock and pour the liquid onto the vegetables in the casserole dish. Add the sealed and browned beef and the Old Peculier beer. Adjust the volume of liquid in the casserole dish to just cover the meat and vegetables. Place the casserole dish into a heated oven at 180°C and bring up to a simmer. Reduce the heat to maintain just a simmering condition, about 140/150°C. Continue cooking until the meat is tender. (About 1½ hours) Adjust the seasoning. Remove from the oven and allow to cool before placing in the refrigerator overnight.
Reheat the casserole and its contents adding the sliced mushrooms about 30 minutes before serving the dish.
Note: If wanted the Stock can be made from either chicken or vegetable stock cube, or the requisite amount of stock granules. My personal preference is to use beef stock with beef. The residual oil left after cooking the steak cooked with flour will add some thickening to the dish gravy. As an alternative, if further thickening is needed you can use either a small amount of Corn flour suspended in a little cold water or Arrowroot. I would use Arrowroot as this gives a clear thickening where Corn flour gives a cloudy appearance.

Here's a nice easy recipe.
Pop along to Sainsbury's and buy a pack of what they call cooking bacon (WTF else would you do with it?) It's offcuts and comes in a big pack.
Cut some up into small chunks and fry until it's crispy.
Add some chopped mushrooms, some grated parmesan cheese, some pasta (already cooked) and an egg (one per person)
Stir until the egg is cooked and serve.
Truly scrummy.
